Elegant Sweet Potatoes Souffle

It’s hard to believe a vegetable as delicious as sweet potatoes is so healthy and nutritious. Put it in a souffle and you’ve got one of my favorite dishes on the Thanksgiving table. I used to love it topped with marshmallows and cherries. But now I want something without all those added calories.
My friends Mike and Teri make this sweet potato recipe that’s low in sugar but high in flavor. Instead of topping it with marshmallows they use pecans. That sounds delicious, doesn’t it? Give this recipe a try during the holiday season and let me know how you like it!

Sweet Potatoes Souffle

Note: Serve hot!  Sweet Potatoes Souffle can be made a day in advance and re-heated in the microwave.  Teri and Mike Vedda, Texas

 

Ingredients

Sweet Potatoes Mixture

5 C. Sweet Potatoes (baked soft)
1 tsp. Salt
2 tsp Ground Cinnamon
1 oz. Rum or vanilla ( 1/2 oz. of each is nice)
1 C. Splenda Brown Sugar
4 Eggs (Beaten)
1 Stick Butter (Melted)

Souffle Topping

1/2 C. Flour
1/2 C Splenda Brown Sugar
3 T. Ground Cinnamon
1 Stick Butter (Melted)
1 C. Pecan (Optional)

Instructions


Sweet Potato Mixture
1. Sweet potatoes should be baked and cooled so that you do not have to scoop out hot potatoes.
2. Scoop out flesh of sweet potatoes
3. Puree all of the above together
4. Pour into greased 8″ x 11″ baking dish

Topping
1. If using pecans, arrange on top of pureed Sweet Potatoes Souffle neatly starting around the edge and working your way to the center.
2. Mix the dry topping ingredients together (Flour, Brown Sugar, Cinnamon)
3. Pour dry topping evenly over the pecan topped souffle.
4. Pour melted butter over the top.
5. Cover and bake at 350 degrees for 60 minutes.
6. Uncover and bake for an additional 30 minutes at 350 degrees.
