Pumpkin Cookies

I don’t like to pick favorites but these are by far the best pumpkin cookies I’ve ever eaten.  I first one I had was while we were in Niagara Falls, Canada filming the PBS-TV Concert Beautiful World. We were rehearsing day and night, filming segments outside near the Falls and in the Fallsview Casino.  There wasn’t a lot of time to eat. The Green Room had the usual snacks; hummus and pita, soggy cut-up veggies and of course stale granola bars.  In walked our good friend Deb with a basket filled with freshly-baked cookies. It was like she brought “manna from heaven.” Everyone dove in for a taste of her delicious treats. It was a unanimous decision that the pumpkin cookies were the best ever!  We nicknamed them “Beautiful World Pumpkin Cookies.”

Beautiful World Pumpkin Cookies

Note: These cookies were baked and served backstage to the Beautiful Wold cast and crew during the rehearsal and concert.  No wonder everyone was in such a good mood.  They were an instant hit! – Deb Thomsen, New York


1/2 C. Shortening
1 C. Sugar
1 Egg
2 C. Flour
1/2 tsp. salt
1 tsp. Baking Soda
1 tsp. Baking Powder
1/2 tsp. Cinnamon
1/2 tsp. Nutmeg
1 – 15 oz. can 100% Pure Pumpkin

2 oz. Cream Cheese
2 oz. Margarine
2 C. Powdered Sugar
1/2 tsp. Vanilla



  1. Cream together shortening, and sugar. Add egg and beat.
  2. Mix and add flour, salt, baking soda, baking powder, cinnamon, nutmeg.
  3. Fold on pumpkin a little at a time. (Optional – add chocolate chips)
  4. Drop with teaspoon on a greased cookie sheet.
  5. Bake at 375 for 12-15 minutes


  1. Mix cream cheese and margarine.
  2. Add powdered sugar and vanilla

     This should be enough to frost 1 batch.  You can use fat-free cream cheese.
